I’ve done Hazelnut, Almond… so now it’s time for Pistachio Sourdough Bread with awesome “baklava-like” tasting pistachio praline!
I had some pistachio praline paste left from Andy’s birthday cake, and decided to use it to spice up my usual sourdough bread. I would have normally used a rich dough for sweet fillings like the pistachio praline, but I wanted to keep it simple, plus I didn’t have butter in stock..ooops, and the top reason is because… as usual, I wasn’t sure where I was going when I was making this bread…
So I made my usual sourdough bread dough with some extra honey for mild sweetness, and folded in the pistachio praline paste as I was doing the final shape.
Pistachio Praline Paste:
Pistachio (shelled) 200g
1. Heat up sugar on a low-medium heat until it’s golden.
2. Take the pan off the heat, add pistachio to coat them well with the sugar.
3. Pour 2 onto a baking sheet and leave to cool down.
4. Blitz the sugar coated nuts in a food processor until it’s smooth.
The simple dough worked well with the sweet sticky pistachio praline. I loved the crunchy bits on the top. I couldn’t stop picking the oozed out slightly burnt praline paste.
Yum and absolutely addictive! ;D Could this be a “healthier” alternative to the eggy and buttery (in other word, pretty fattening but heavenly) Hazelnut Praline Rolls
